Spicy Lentil Cauliflower Soup

Saute 1 diced onion a 2 minced cloves of garlic in coconut oil
Stir in 1 tbsp minced ginger, 1 tbsp curry powder, 1.5 tsp ground coriander and 1 tsp ground cumin and saute until you can smell the aroma.
Add 1.5 litres veg broth and 190g rinsed and drained red lentils, bring to a low boil then simmer for 5 mins
Stir in 1 medium cauliflower chopped into florets and one peeled and diced medium sweet potato
Simmer for 20 mins until potato and cauliflower are soft.
Season to taste, add more curry powder if desired.
Stir in the spinach and cook until wilted
Yodel Ladle into bowls and top with coriander if desired
