Lentil Shephardless Pie

often 1 onion and 3 cloves garlic in coconut oil…. Add 1 large diced carrot, 2 diced sticks of celery, 2 cups diced mushrooms, 2 tbsp rice flour, 2 cups water, 1 tbsp tomato purée, 1 bay leaf, 1tbsp fresh thyme, 1 tsp turmeric, black pepper and seasoning to taste……Bring to the boil then simmer for about 30 mins
Whilst that is happening chop 2 sweet potatoes, pop in a pan, cover with water, bring to the boil then simmer for 15 minutes. drain and mash
Remove bay leaf, Blend it up, put back in the pan, add 100g cooked green lentils and 100g cooked brown lentils and add some frozen peas or small chunks of carrot or another veg. Cook together for 5 mins.
Serve with a dollop of mashed potato on top and your favourite veggies on the side.
